Garden Day

Found someone on ever famous list of craig.  A dump truck full of compost was plastered onto the lawn and some of it has migrated into the garden.  Yup, the garden is now tilled and ready to plant.  Even migrated some berry of some sort, either black or ras we’ll see when they start to grow.

New Food Source Acquired

Just like back in San Diego one of our food sources will be rabbits.  Picked up two does and a buck again.  They’re 7 weeks old so should be breeding about may.  This gives us plenty of time to get quite a bit of rabbit meat throughout the year.  Yum, rabbit stews!

Duck Prosciutto

This is my first attempt at salt curing a meat. I figured I’d make something wacky. It’s gonna take a couple of weeks before I can have everything on here, but this is what I have done so far. Yesterday I bought what I needed. A duck breast and some of that mortens salt with the nitrite in it.


The duck breast I bought. Used peking because it had the highest fat at the butcher at the time.


Secret blend of hidden spices. It’s a slight deviation of my generic bbq rub. I did add some cumin to give this prosciutto a hispanic flavor.


Let’s salt this bitch!


Gotta bag it up, squeeze out all the air.


Now it’s gonna sit in my fridge for a few days.

I’ll update as soon as I pull it out. Next step is to rinse off with cold water, reapply rub, cover in cheese cloth and then let air dry for a week or so.

Quick, and Good, Crab & Tomato Bisque

stewed tomatoes.jpegI’m a fan of cooking. I’m also a fan of two styles of it. Ghetto, or taking my sweet sweet time, cooking. Of course my ghetto recipes can be turned into great recipes that take time to cook if you get rid of canned foods. This one is about the tomato and crab bisque I just made trying to figure out what I should do to create one. My last attempt at making a tomato based vegetable soup was a horrible experiment. While tasty did not have the consistency that I wished.

Ingredients needed:

  • Three cans of Del Monte canned stewed tomatoes.
  • One can of crab meat
  • Half a stick of butter
  • About a cup of milk
  • handful of flour

You can stew your own tomatoes, get your own fresh crab, or add and remove other vegetables and spices. I went with two cans of the italian style tomatoes and one can of the mexican style. These had celery, onions, and various herbs and spices already added so I didn’t have to do too much.

Start off heating all the tomatoes in a pot. Then you’re gonna create a rue. Basically you brown the handful of flour in a pan, then melt in butter. Mix it around until the flour is fully absorbed into the butter. Pour in your milk and stir that until the entire mixture resembles paste.

Now that the tomatoes are heated add the can of crab meat and the rue to the pot. Grab your hand mixer and go to town. Should take less than 10 minutes to create this entire meal.

Serve cold on a hot day, serve hot on a cold day. Garish how you wish. I went with club crackers :p

What ever is left over after dinner tonight will go into my dehydrator and put in the freezer. Should keep for a couple of years if it’s cold because of the oil and crab in the soup.

Death by Pork

As most people know, yesterday was the super bowl.  So went over to a friend’s apartment and had far too much pork.  I wrote about bacon explosion a little bit ago, and figured why not try it out on some unsuspecting friends?  That’s exactly what I did.  I have to say "explosion" is a great name for this product of pork.  I would go with "death" instead.  After consuming my slice I felt my stomach about to explode, a Xenomorph popping free and slaughtering my friends.  Damn it was tastey though.  Would have worked better on a grill.

Before anyone else could come over, a building two or three doors down, seemed to have caught fire.  I’m going to guess somene’s cooking didn’t agree with the walls and decided to pick a fight.  It was pretty sweet watching the firemen do their thing.  Running up ladders, carrying hoses and all that.  It must not have been a very big fire because it was all over within 15 minutes.  Firemen really do have a tough gig.

Then onto the super bowl.  What a game that was.  I was very shocked when the Cardinals took the Steelers towards the end.  Then in the last few minutes of the fourth quarter the Steelers went and did an incredible drive to win.  Down to the last minute.  Was exciting to watch the only foot ball game of the year that I ever watch.

Of course super bowl means commercials some were really god damn hilarious, I’ll only post two that cracked me up and we had to rewind on the TiVo a few times to witness a second, even third time.
